Weekly menu for 4/1/19 and meal planning tips

Happy Meal Plan Monday! There is nothing like having meals planned and ready for the week. We were also ready to get the groceries bought and got a lot of prepping done yesterday! So Monday doesn’t feel so Monday-y. When it comes to meal planning and prepping I have found a few tips and tricks that work great for our household. Feel free to use what works for you~ also I would love to hear something that is working for your family. I am always on the lookout for new ideas to add to my planning!

Meal Planning Tips and Tricks:

  • Using your calendar, plan out meals that make the most sense for each night
  • Don’t forget to plan in leftover meals
  • Take the time to also use up what you already have (take a peek in your fridge & pantry for FREE items)
  • Plan your Grocery list at the same time as your meal planning and kitchen inventory
  • Grocery shop
  • Prep ahead what you can
  • Theme nights- this is a new one I am trying
    • Meatloaf Monday, Taco Tuesday, Wednesday Leftovers, Thursday Crockpot, Tryday Friday, Saturday out to eat, Sunday Casserole (or something easy to reheat for lunches for the week)

Monday:

Since I made this on Sunday, we sliced it up so Monday evening it is really easy to just grab and eat!

Meatloaf

  • 1# ground beef
  • 1# sausage
  • 1 egg
  • 1/4 cup of flour (I used Cassava Flour)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • bacon
  1. Mix all the ingredients except the bacon & put into a loaf pan
  2. Lay bacon across both ways with bacon and tuck it under the loaf
  3. Bake at 350 degrees for 1 hour and 15 minutes (until completely done and there is no pink in the center)
To reuse this meal:
  • reheat as is
  • crumble up a piece and put it over rice (for a rice bowl)
  • have a Meatloaf sandwich
  • cook up some diced sweet potatoes and crumble it in all together! 

Tuesday:

Tacos

My favorite way to have tacos is in a bowl form!

  • Cauliflower Rice
  • Taco Meat
  • Cheese
  • Cherry Tomatoes
  • Ranch

Wednesday:

Leftovers

Thursday:

This one is one of my favorite and most “go-to” recipes. I don’t do any pre-cooking here, everything just goes in the crockpot in the morning.

Cool Ranch Tacos (I make a few edits to her recipe)

These are super, super easy & here is what you need~

Crockpot

  • Chicken Thighs
  • 3 Tablespoons of Olive Oil
  • 2 Tablespoons of Red Wine Vinegar
  • 1 Taco seasoning packet (or click here for a homemade version)
  • 1 Ranch seasoning packet (or use a homemade version-1T dried parsley, 1tsp garlic powder, 1tsp onion powder, 1tsp dried onion flakes, 3/4tsp dill, 1/2tsp pepper, and 1/2 tsp salt)

*Throw everything in the crockpot, Cook on low all day, at least 8 hours

Holy Cow- it doesn’t get much easier than that!

Friday:

Chicken Taco Soup

  • Chicken ~ I am using leftover chicken meat from the previous night (so it is already has taco seasoning on it)
  • 1 can black beans
  • 1 can kidney beans
  • 1 can tomatoes
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 1 small can coconut milk

Put all ingredients except coconut milk into crockpot

Cook on low all day

Right before you are ready to serve add the coconut milk

Enjoy!

Saturday:

Out to Eat!

Sunday:

Cauliflower Crust Pizza

  • Riced Cauliflower
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp parsley
  • 1 tsp basil
  • spaghetti sauce
  • hamburger
  • cheese

Cook the riced cauliflower according to package

Drain the cauliflower rice really well. The more water you can get out, the crispier the crust will be!

Add in the egg

Put on a cookie sheet on aluminum foil & flatten it out

Cover with an egg wash and then seasonings

Bake for 16 min at 450 , then flipped and baked for another 5 min

Put desired sauce & toppings on the top and bake for another 8 min or so
