Weekly Menu~ 6/15/20

Monday:

Tacos- pick your own adventure….

Start with making some taco seasoning- it is so easy and yummy!

Adventure 1-

  • Find your favorite Tortilla then add…
  • Meat
  • then pick your toppings/garnishes
    • lettuce
    • tomatoes
    • black beans
    • salsa
    • cheese (I mean is that even a choice)
    • sour cream
    • avocado
    • cilantro

Adventure 2-

Taco Salad:

  • Start with Lettuce
  • then pick your toppings/garnishes
    • meat
    • lettuce
    • tomatoes
    • black beans
    • salsa
    • cheese (I mean is that even a choice)
    • sour cream
    • avocado
    • cilantro

Adventure 3-

Taco Rice bowl:

Pick your rice- white, brown or cauliflower

  • then pick your toppings/garnishes
    • meat
    • lettuce
    • tomatoes
    • black beans
    • salsa
    • cheese (I mean is that even a choice)
    • sour cream
    • avocado
    • cilantro

Tuesday:

Breakfast Bowls

Wednesday:

Roast & Salad

My favorite way to cook roast is using my crockpot. There is something about it slow cooking all day that makes it tender and delicious!

This is the crockpot that I use- I have had it forever and use it multiple times a week! Here is one similar to mine on Amazon.

Thursday:

Chicken Thighs with veggies

These chicken thighs are delicious & so simple!

  • Add olive oil to the skillet
  • Season the chicken with salt and pepper
  • Cook about 15 minutes on both sides, or until cooked through

Roasted Asparagus

  • Wash and dry asparagus
  • Cut woody ends off
  • Put asparagus on a baking sheet
  • Drizzle olive oil & season with salt and pepper
  • Roast in oven at 425 for about 10 minutes

Baked Sweet Potatoes

These were quick and easy to fix! I just washed the sweet potatoes, poked several holes in them with a fork, and then cooked in the microwave with the potato button. Just add butter, salt and pepper!

Friday:

Turkey Burgers, Sweet potato hash & Asparagus

Turkey Burgers~

*Using ground turkey make up patties

*Season with salt, pepper and garlic powder

*Cook up on a skillet

Sweet Potato hash~

*Dice  2 sweet potatoes

*Add olive oil or coconut oil to a skillet, heat and then add sweet potatoes.

*Put in some diced garlic, salt and pepper.

*Stir frequently and cook until potatoes are tender (easily poked with a fork, is the rule I use)

Roasted Asparagus

  • Wash and dry asparagus

Saturday:

Dinner out with friends

Sunday:

Chicken Fried Rice 
  • Chop desired veggies (I used carrots, garlic, bok choy, broccoli & cauliflower)
  • Add olive oil & sesame oil to skillet- then put in heated skillet!
  • Next add- chicken and rice
  • Then 1/2 cup of coconut aminos
  • Cover skillet and let cook until done!
  • **I used chicken and rice that I had made earlier in the week (just cut the chicken into bite sized pieces)
