Weekly Menu

There is something about having my meals planned for the week that helps everything else go smoother! Here is what is cooking in my kitchen this week~

Monday:

Breakfast Sandwiches
Scrambled Eggs & Bacon on a buttered english muffin

Slow Cooker Paleo Chicken Tikka Masala

Serves: 4-6 | Prep: 5 mins

✨  Ingredients ✨
1.5 -2 lbs chicken thighs, cut into bite-sized pieces
1 medium yellow onion, chopped
1 Tbsp minced garlic
1 Tbsp minced ginger
1 Tbsp curry powder
½ Tbsp sea salt
½ Tbsp ground cumin
½ tsp ground turmeric
1 tsp paprika
¼ tsp cinnamon
¼ tsp black pepper
¼ teaspoon cayenne pepper
14oz (1 can) tomato puree
½ can coconut milk
2 bay leaves
1 Tbsp arrowroot
2 Tbsp water
Cilantro + cauliflower rice, for serving

✨Directions✨
SLOW COOKER
1. COMBINE the cut up chicken, onion, garlic, ginger, all the spices, and sea salt in the slow cooker. Stir with a wooden spoon so all the pieces are evenly coated.
2. STIR in tomato puree, coconut milk and bay leaves.
3. COVER and cook for 6 hours on low.
4. WHEN the timer is almost done, whisk together 2 Tbsp water and arrowroot to create a slurry. Pour over the chicken and gently stir. Let it cook with the top off an additional 10 miNs so the sauce thickens.
5. SERVE warm, with cauliflower rice and chopped cilantro!

 

Wednesday:

Cool Ranch Tacos (I make a few edits to her recipe)

These are super, super easy & here is what you need~

Crockpot

Chicken Thighs

3 Tablespoons of Olive Oil

2 Tablespoons of Red Wine Vinegar

1 Taco seasoning packet (or click here for a homemade version)

1 Ranch seasoning packet (or use a homemade version-1T dried parsley, 1tsp garlic powder, 1tsp onion powder, 1tsp dried onion flakes, 3/4tsp dill, 1/2tsp pepper, and 1/2 tsp salt)

*Throw everything in the crockpot, Cook on low all day, at least 8 hours

I like to serve this over rice!!

Thursday:

Friday:

Spaghetti~

1 lb of ground hamburger

1 lb sausage

Spaghetti sauce- I always add oregano, parsley, garlic, etc)

Zucchini noodles (or whatever kind of noodles you like)

Parmesan cheese

Cook the meat together- after completely done,  add spaghetti sauce and spices. Add to your bowl full of noodles & top with parmesan cheest

 

Saturday:

Sunday:

BLEATS:

if you don’t know what these are you are truly missing out.  Imagine a  traditional BLT’s but you add an egg (fried) and avocado. They are pretty much one of the most amazing things you’ll ever have, so you should definitely try it if you haven’t.
