Make My Menu Monday~ 6/4/18

Happy Make My Menu Monday!! It has been a BIG couple of weeks in my household!! My daughter graduated last weekend and we had her graduation party yesterday, to top it off my son will be 16 this week. So my mom emotions are on high alert!!

Do you ever find yourself feeling a little overwhelmed by life? There is a lot going on. I used to spend a lot of time in that place of being overwhelmed. Through a series of events in my life, I learned that I had to stop living in that place of feeling stressed and worried. That I had to learn to live in peace. One of the ways that I do that is by taking time for self care. I have several posts on self care~ click for the link: Self care Tool KitJournaling Self Love, Sleep, 5 things to do for a peaceful start to your day,  but a great one to start with is through daily affirmations. Search Pinterest (one of my favorites) for daily affirmations, and you will find as many as you could possibly want!! (If you want to check out my Pinterest boards click here.) I try to say one every morning. It is a great way to start the day. Seriously, it makes a difference. Sometimes I will get out of habit of doing it and I can tell. I have to ask myself- what’s going on? It usually has to do with me not doing some of the “self care” activities that help bring me peace. I want to share one with you today.

Every morning I start my life anew.

Nothing that I was before determines who I am now, or who I am becoming.

I watch every thought and word without attachment, easily shifting to good-feeling thoughts.

I find alignment with ease.

I see beauty and perfection in myself and others.

I rejoice in creation and trust in the unknown.

Everything I need comes to me effortlessly.

I am infinitely abundant. 

I trust and surrender in the flow of life.

I use my power, my word and my energy for good.

I know that now is the best moment because it is the only thing that is real.

I release self-importance and see the unity within all things.

I am fully present and actively listening.

I take my time with everything.

I am giving love without conditions, and receiving love with grace.

I know how important and loved I am.

I am one-of-a-kind that cannot be duplicated.

I love myself, I love my life and life loves me.

Monday:

Taco bowls~ this is my favorite taco seasoning recipe!! It’s easy and yummy. I LOVE knowing exactly what is in it, no surprise ingredients!!

Ingredients

For the Meatloaf

  • 2-2.5 lb grass fed ground beef
  • cup almond meal/flour
  • eggs
  • 1/2 yellow onion, finely chopped
  • garlic cloves, minced
  • tablespoons garlic powder
  • tablespoons onion powder
  • 11 sliced uncured bacon, 2 sliced cooked and diced

For the BBQ Sauce

  • (6oz) can tomato paste
  • onion, minced
  • 1/2 cup apple cider vinegar
  • 1/3 cup water or broth
  • tablespoons apple butter (optional)
  • tablespoon ground mustard (no sugar added)
  • garlic cloves, minced
  • tsp cayenne pepper
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon allspice
  • pinch or two of ground cloves
  • tsp sea salt
  • 1/2 tsp freshly ground black pepper
  • splash of hot sauce, to taste

Directions:

  1. Preheat oven to 400 degrees.
  2. Dice up your 2 pieces of baconand throw in a frying pan to cook up for about 5-7 minutes.
  3. While the bacon is cooking, mix together all other ingredients (except for your 9 slices of bacon) in a large bowl. Once your 2 pieces of bacon are done cooking, add them to the bowl and fully incorporate into the mix.
  4. Now grab 2 bread loaf pans and add an equal amount to both. Top the meat off with bacon.
  5. Cook for 45 minutes.

BBQ Sauce Directions:

  1. In a large frying pan, add some olive oil (or other fat) and brown the onion–about 5 minutes.
  2. Add the garlic and stir together to cook a bit more.
  3. Add all other ingredients and mix together, then let simmer for 10-15 minutes (or longer if you have time-I usually want to eat as quick as possible).
  4. Now plop that sauce on top of your meatloaf and store the rest in a cute Tupperware container in the fridge.

Scrambled eggs & then pick your add-ins~

  • Tomatoes
  • Feta cheese
  • Spinach
  • Bacon
  • Sausage
  • Avocado

Saturday:

Hamburgers & brussel sprouts~

I really enjoy panfrying burgers. For the seasoning, I keep it simple: Sea salt, pepper, & garlic powder.

Honey Sriracha Brussel Sprouts:

If you have large brussel sprouts, cut in half. Put them on a cookie sheet & drizzle olive oil over & sprinkle with salt

Roast them for anywhere from 20-40 minutes depending on the size. You want them to be crispy and slightly browned, but watch them because they can go from perfect to burnt to a crisp quickly!

While they are roasting, make the sauce-

2 TBL Honey, 1 tsp Sriracha & a splash of lime juice

Once they are done, let them cool slightly. Then add some more salt to taste.

BLEATS:

if you don’t know what these are you are truly missing out.  Imagine a  traditional BLT’s but you add an egg (fried) and avocado. They are pretty much one of the most amazing things you’ll ever have, so you should definitely try it if you haven’t.
