Well, hi friends! Hoping you had restful weekend! There is something about being able to work on some organizing projects that really helps me feel ready for the upcoming week! If you need some inspiration for your weekly menu- you are in the right place! Most of the meals are quite simple this week:
A week of simple meals:
Monday:

These are super, super easy & here is what you need~
- Chicken Thighs
- 3 Tablespoons of Olive Oil
- 2 Tablespoons of Red Wine Vinegar
- 1 Taco seasoning packet (or click here for a homemade version)
- 1 Ranch seasoning packet (or use a homemade version- 1 Tbl dried parsley, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp dried onion flakes, 3/4 tsp dill, 1/2 tsp pepper, and 1/2 tsp salt)
*Throw everything in the crockpot, Cook on low all day, at least 8 hours
Holy Cow- it doesn’t get much easier than that!

Thursday:
Roast & Salad
My favorite way to cook roast is using my crockpot. There is something about it slow cooking all day that makes it tender and delicious!
This is the crockpot that I use- I have had it forever and use it multiple times a week! Here is one similar to mine on Amazon.
Friday:
Home Chef Garlic Sesame Beef Lo Mein
Saturday:
Crockpot Chili
- 2 lbs hamburger
- chili powder, garlic powder, cumin, paprika, salt and pepper
- 1 can kidney beans
- 1 can black beans
- 1 can diced tomatoes
- Cook hamburger until done
- Add all ingredients to a crockpot
- Cook on low 8 hours, let cool
- Put into freezer bags (if making ahead of time)
Sunday:
Leftovers
