What to make for dinner 4/12/21

Spring has sprung around here! We have welcomed sunshine back today and I can’t believe what a difference it makes!! I hope that you are getting to enjoy spring where you are. When it comes to what to make for dinner at our house I like to keep it simple. My goal is to have dinner on the table, if it is overly complicated then it becomes frustrating.

Monday:

Home Chef Garlic Pepper Chicken & Honey BBQ Sauce with Cheddar Bacon Broccoli (try Home Chef for $35 off)

Tuesday:

Home Chef Feta and Dill Crusted Pork Chop (Try Home Chef for $35 off)

Wednesday:

Slow cooker Chicken tacos

  • Slow cooker
  • 2 lbs Chicken breasts or thighs (chopped)
  • 1 TBL Chili powder
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • 1/4 tsp Red pepper flakes
  • 1/2 tsp Paprika
  • 1/2 TBL Cumin
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 TBL Olive Oil
  1. Add all ingredients to the slow cooker

  2. Cook on low 8-10 hours

  3. Shred chicken

  4. Serve with tortillas, chips, or over lettuce

  5. Add desired toppings- black beans, shredded cheese, sour cream, salsa, avocado

Main Course

Thursday:

Thai Chicken stuffed sweet potatoes

  • 2 lbs Chicken breasts/thighs (chopped)
  • 4 Sweet Potatoes
  • 1/2 cup Coconut milk (you can use any kind really!)
  • 1/2 cup Smooth nut butter
  • 2 TBL Coconut aminos
  • 1 tsp Sriracha
  • 2 tsp Sesame oil
  • 1 TBL Honey
  • 1/2 tsp Red pepper flakes
  • 2 cloves garlic (minced)
  • 1 tsp Salt
  • 2 TBL olive oil
  • 1 tsp garlic powder
  • 1/2 cup cilantro (chopped)
  • 1/4 cup cashews (chopped)
  1. Cook sweet potatoes (microwave or oven)

  2. While sweet potatoes cook, cook the chicken

  3. Place oil into a skillet

  4. Cook chicken until no longer pink and at internal temperature of 165

  5. Put milk, nut butter, coconut aminos, garlic, sauce, sesame oil, honey, garlic and salt in a blender or food processor, puree until mixed well

  6. Add everything together

  7. Split sweet potatoes open, add meat mixture

  8. Top with cilantro and cashews

  2. Cook in batches- cook up a bunch of taco meat- divide it out and freeze. Each week you have a meal already made- just heat up in the crockpot during the day!
  3. Sit down to meal plan each week- then you only have to make the decision 1 time what you are having for dinner, instead of 7 times.
