A week of dinner planning 4/5/21

If you are ready to feel less stress in your household, give a week of dinner planning a try!

There is something peaceful about getting our dinners planned for the week. Something as simple as sitting down for 15-30 minutes to plan our meals out, leads to nights that run smoother and are less hectic. An added bonus, you don’t have to continue to make decisions about dinner 7 times, just once. That is a win to me!!! Monday:

Home Chef: Walnut-Crusted Chicken with Basil Pesto Sauce and Green Beans (use my referral code for $35 off)

Tuesday:

Home Chef : Smoked Almond and Herbed Goat Cheese Stuffed Chicken Breast

Wednesday:

Mama’s lasagna

Making this delicious comfort food is like giving your family a big old hug!! It also makes the best leftovers!

  • 1 lb ground beef
  • 1 lb sausage
  • 1 clove garlic
  • 1 TBL parsley
  • 1 TBL basil
  • 1 1/2 tsp salt
  • 1 can tomatoes
  • 2 6 oz can tomato paste
  • 10 oz lasagna noodles
  • 3 cups cottage cheese
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 eggs
  • 2 TBL parsley
  • 1/2 cup shredded parmesan
  • 1 lb mozzarella, sliced
  1. Brown meats

  2. Add next 6 ingredients and simmer, uncovered until sauce is thick (30 minutes)

  3. Cook and drain noodles according to package instructions

  4. Combine cottage cheese with egg, spices and parmesan cheese

  5. Place 1/2 noodles in a 9 x 13 pan

  6. Spread 1/2 the cottage cheese mixture

  7. Spread 1/2 of mozzarella

  8. Spread 1/2 of meat mixture

  9. Repeat layers

  10. Bake at 375 degrees for 30 minutes

  11. Let stand 15 minutes & enjoy!

Thursday:

Pizza and salad

I have found that having at least 1 meal that you just have to heat up is really helpful. We came across these yummy pizzas that have crusts made from sweet potatoes- and they are delicious!

Friday:

Leftovers

Having a leftover night planned is a must! It cuts down on food that is wasted & gives 1 less night of actual planning!

Saturday:

Sunday:

Taco Bowls
