Weekly Menu 5/13/19

On the menu this week are some simple meal options! Meal planning helps make the week more calm and efficient. The rare week that I don’t have meal planning done really feels more chaotic and stressful! Some weeks I do an awesome job with meal planning and I have time to do all of my grocery shopping, meal prep and have everything really planned out, some weeks (like this one) just having the menu planned out is good enough!! It really helps to keep some basic items on hand to put together quick meals. I ordered 5 lbs of hamburger through a local site called Lonetree Foods. It’s a group of local farmers that sell produce, meat, cheese, etc. I love being able to buy locally and support local farmers.

Here’s what we have cooking for dinner this week:

Monday:

** Need a quick dinner- this one took me 10 minutes to prepare**

Breakfast for dinner

  • Scrambled eggs
  • Applegate Chicken and Maple sausage
  • Sandwich thin with peanut butter
  • Peas

Tuesday:

Cool Ranch Tacos (I make a few edits to her recipe)

These are super, super easy & here is what you need~

Crockpot

  • Chicken Thighs
  • 3 Tablespoons of Olive Oil
  • 2 Tablespoons of Red Wine Vinegar
  • 1 Taco seasoning packet (or click here for a homemade version)
  • 1 Ranch seasoning packet (or use a homemade version-1T dried parsley, 1tsp garlic powder, 1tsp onion powder, 1tsp dried onion flakes, 3/4tsp dill, 1/2tsp pepper, and 1/2 tsp salt)

*Throw everything in the crockpot, Cook on low all day, at least 8 hours

Holy Cow- it doesn’t get much easier than that!

Friday:

Grill Out!!

Hamburgers

Sweet Potato hash~

*Dice  2 sweet potatoes

*Add olive oil or coconut oil to a skillet, heat and then add sweet potatoes.

*Put in some diced garlic, salt and pepper.

*Stir frequently and cook until potatoes are tender (easily poked with a fork, is the rule I use)

Salad

Sunday:

BLEATS- if you don’t know what these are you are truly missing out.  Imagine a  traditional BLT’s but you add an egg(fried) and avocado. They are pretty much one of the most amazing things you’ll ever have, so you should definitely try it if you haven’t.
