Happy Monday!
As much as I LOVE the weekend, I also LOVE routine—so Mondays can be FUN! I promise.
This past weekend was full of activity! It was Senior Night for my daughter’s band. My only goal was to survive standing on the football field without embarrassing her too much by being a total bawl baby. I think I did pretty well—just teary-eyed, but managed to keep my emotions mostly in check.
Besides me being a little emotional, we also had:
Another band competition
Church activities
Projects around the house (I made some changes to my coffee bar—I’ll be sharing soon!)
Laundry (wash, dry, fold, and put away—ta da!)
And for a little downtime, I watched a movie I’m a bit late to the party on—Warrior. It was fantastic! If you haven’t seen it yet, it’s worth your time.
Weekly Meal Plan
Here’s our weekly menu to make dinner planning easier for you:
Monday: Philly Cheese Steaks
Quick and easy! I use frozen steak cooked straight from the freezer—no thawing needed.
Sauté mushrooms and onions, add Swiss cheese.
Kids love hoagie buns; adults often eat it over white or cauliflower rice.
Tuesday: Tacos with Guacamole
Stop by Tuesday for THE BEST guacamole recipe!
Wednesday: Buffalo Chicken Casserole
From my favorite Paleo blog, PaleOMG.
Thursday: Pork Shoulder Roast
Inspired by the Pioneer Woman, adapted to be healthier and perfect for a crockpot meal:
Swap brown sugar with coconut sugar in the marinade.
Coat the pork roast in the sauce, place in the crockpot on low for 12+ hours.
Perfect for shredded pork bowls, tortillas, or just on its own.
Friday: Out to Eat
Saturday: Cool Ranch Tacos
Super easy with these ingredients:
Chicken thighs
3 tbsp olive oil
2 tbsp red wine vinegar
1 taco seasoning packet (or homemade)
1 ranch seasoning packet (or homemade: 1 tsp garlic powder, 1 tsp onion powder, 1 tsp dried onion flakes, 3/4 tsp dill, 1/2 tsp pepper, 1/2 tsp salt)
Throw everything in the crockpot, cook on low for at least 8 hours.
Sunday: BLEATS (BLT + Egg + Avocado)
Truly the best sandwich ever—you’re welcome.
I hope your week is full of delicious dinners! Don’t forget to check back on Tuesday for that guacamole recipe, and later in the week for my coffee bar reveal. If you need more meal inspiration, Organizing Junkie has tons of great recipes.
Thanks so much for stopping by!
