Quick weekly menu 9/27/21

One of the things that I have learned with planning a menu each week is: you have to find what works best for you and your family. Some things that I have tried, that looked great on Instagram or Pinterest, didn’t work for me. So instead of wasting time trying to force it to work, I have learned to just move on and find what does work. Something that has worked really well, is making my own taco seasoning.It’s really nice to know exactly what the ingredients are. There is no reason for chemicals or preservatives, and it takes only a couple minutes to whip up. Since we make some form of tacos at least once a week- I find this recipe to come in handy when I am making a quick weekly menu.

Taco Seasoning

Monday:

Vegetarian Taco Casserole from Cook Once Dinner Fix cookbook by Cassie Joy

Tuesday:

Quesadillas 

  • Meat (ground beef or chicken)
  • Cheese
  • Beans
  • Lettuce
  • Tomatoes
  • Avocado
  • Sour cream
  • Tortillas
  1. Cook meat with taco seasoning (I prefer to make this in my crockpot or Instantpot
  2. Once meat is cooked- spray and heat additional pan
  3. Place 1 tortilla fill with meat, beans and cheese, then put another tortilla over the top
  4. Once cheese has melted, flip 
  5. When both sides are slightly crispy, they are ready!
  6. Top with avocado, lettuce, tomato and sour cream

Wednesday:

Thursday:

Spaghetti

  • 1 lb of hamburger
  • 2 cloves of garlic, diced
  • 1 jar of spaghetti sauce
  • oregano, parsley, garlic
  • Noodles or Spaghetti squash
  • Parmesan Cheese
  • Mozzarella Cheese
  1. Prepare Noodles per package or
    • If you are going to us Spaghetti squash, here is an easy way to cook Spaghetti squash
    • Easiest way to prepare Spaghetti Squash
    • Wash your squash
      1. Pierce it several times with a knife
      2. Put it in the crockpot with 1 cup of water or broth
      3. Cook on low for 4-6 hours
      4. Remove from the crockpot- it will be hot so BE CAREFUL!!
      5. Cut it in half and shred the noodles
  2. Cook meat in skillet with diced garlic
  3. Add spaghetti sauce
  4. Combine the noodles and sauce- add cheese
  5. Enjoy!

Friday:

White Chicken Chili in the crockpot

Ingredients:

  • 2-3 lbs chicken thighs
  • 1 can white kidney beans
  • 1 can black beans
  • 1 can corn
  • 2 cans of chicken broth
  • 1 ts. salt
  • 1 tsp pepper
  • 1 TBL chili powder
  • 2 tsp cumin
  • 1 tsp oregano

Directions:

  1. Put everything in the crockpot
  2. Once the cooking is done add- 1 cup of sour cream
  3. Then the toppings!!!
  • Cilantro
  • Shredded cheddar cheese
  • Diced avocado
  • Tortilla chips or fritos
