Quick weekly meal plan~ 9/21/20

A quick weekly meal plan helps us achieve one of the focuses around our house-  finding ways to simplify life. As we are looking at our daily tasks, where are there things we can make life easier and less complicated. Meal planning is a great way that we have found to add simplicity. We are finding ways to make the preparing and cooking part quicker, and the eating and enjoying part the focus. Using my simple guide- How to weekly meal plan, let’s go step by step.

Quick weekly meal plan:

  1. Survey- A quick look at what we have in the pantry, fridge and freezer
    • For example- this week we have on hand- black beans, eggs, spaghetti squash, potatoes, hamburger, sausage, chicken. So my menu is going to involve these items.
  2. Schedule review- looking over which evenings we have things going on helps me decide on what night to make things that just needing heating up, evenings a crockpot meal would be best, or when we can take a little longer to prepare things
  3. Make a plan- This is where you take pen to paper and plan out those meals, while simultaneously making the grocery list. Since you already know what you have on hand (from step 1), this step should be easy peasy.
  4. Prep- find parts of your meals that you can do ahead of time. For this week, I will cook the meat for our spaghetti and the chicken enchiladas ahead of time.
  5. Enjoy- this is the most important part! Making meal planning and cooking less stressful leads to more time to enjoy your meals and the people who you are eating those meals with.

Monday:

Home chef meal- BBQ Chicken

Tuesday:

Home chef meal- Chicken and Feta with green beans

Wednesday:

Leftovers

Thursday:

Spaghetti (using spaghetti squash noodles)

Super easy way to cook spaghetti squash-

  1. Wash your squash
  2. Pierce it several times with a knife
  3. Put it in the crockpot with 1 cup of water or broth
  4. Cook on low for 4-6 hours
  5. Remove from the crockpot- it will be hot so BE CAREFUL!!
  6. Cut it in half and shred the noodles

Friday:

Out to eat

Saturday:

Breakfast for dinner

  • Egg and sausage casserole
  • Cheesy potatoes

Sunday:

Chicken enchilada casserole
