Make My Menu Monday 3/5/18

Well Howdy friends! Did this weekend just seem to fly by for you too? It was beautiful weather here which is always a nice surprise in the beginning of March. It’s a bit of a dreary, rainy Monday morning so if you need a little inspiration to get you going here is a Monday Affirmation form Saratogaocean.com So if you find yourself in a grumpy mood try just saying this affirmation a few times.

I welcome this week with the warm embrace of my heart. I am so grateful to have a new chance to move forward to a happier place in my experience. I thank God and the Universe for this magnificent experience called life.

Now onto my weekly menu:

Monday:

Chicken rice bowls

Tuesday:

Taco Salad

Wednesday:

Left overs

Thursday:

Chili & Cinnamon Rolls

The basic Chili recipe I follow is:

  • 2-3 lbs of meat this time I wanted to make extra so I used 2 lbs ground beef and 1 lb of ground pork (you can also use bison, bacon, or steak)
  • 1/2 yellow onion & clove of garlic (diced)
  • 2 cans of tomato sauce
  • 1 can of tomatoes
  • 2 cans of beans (I used chili & black beans)
  • spices- a mixture of chili powder, garlic powder, paprika, salt & pepper.

Heat pan with olive oil & sauté diced onion and garlic

Add ground beef and pork until cooked through

Add beans, sauce, tomatoes, & spices

If you can,  put all in a crockpot and let it all cook together for several hours

Saturday:

Hamburgers & Brussel Sprouts

Brussel Sprout Recipe~

Preheat oven to 425 degrees

If you have large brussel sprouts, cut in half. Put them on a cookie sheet & drizzle olive oil over & sprinkle with salt

Roast them for anywhere from 20-40 minutes depending on the size. You want them to be crispy and slightly browned, but watch them because they can go from perfect to burnt to a crisp quickly!

While they are roasting, make the sauce-

2 TBLHoney, 1 tsp Sriracha & a splash of lime juice

Once they are done, let them cool slightly. Then add some more salt to taste.

Sunday:

Breakfast for Dinner!

Scrambled eggs- pick your add-ins

  • Tomatoes
  • Feta cheese
  • Spinach
  • Bacon
  • Sausage
  • Avocado

Do you need a sweet treat you don’t have to feel guilty about? I tried these cookies this past week & they were a hit!

  • 4 ounces almond milk cream cheese, room temperature
  • 1/2 cup melted ghee
  • 1/2 cup maple sugar
  • 1 teaspoon vanilla extract
  • 1 egg, at room temperature
  • 1/2 cup + 3 tablespoons cassava flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • pinch of salt
  • 1/2 cup Enjoy Life chocolate chunks

 

  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
  2. Using a hand mixer, beat cream cheese until smooth, then add the melted ghee, maple sugar, vanilla extract and egg and beat until smooth and pale in color.
  3. With the hand mixer on, slowly add the cassava flour until combine, then add baking soda, baking powder, and salt and mix until combine. Lastly, fold in chocolate chunks.
  4. Use a cookie scoop to scoop out 14-16 cookies and place on the baking sheet evenly throughout.
  5. Bake for 20 minutes. Let rest on the baking sheet for 5 minutes before placing on a cooling rack. Then eat ‘em up!
