5 crockpot meals for the week ~ February 8, 2021

Using my crockpot really helps make meal planning work. I am going to share 5 crockpot meals for the week, that will make meal planning super simple! There is something about throwing together some ingredients in the morning and coming home from work with dinner ready to eat! Crockpot

Here is my hardworking crockpot! I have had this crockpot for about 10 years or more! The settings include high, low and warm. The warm feature is really a great option, it keeps meals from burning if they are done cooking but you aren’t ready to eat.

5 crockpot meals for the week (making meal planning easier)

Monday:

Chicken Rockefeller-  Home Chef Meal (try Home chef for $35 off with my referral code)

Tuesday:

Piri Piri Chicken and Feta with green beans Home Chef Meal- try Home Chef for $35 off with my referral code)

Wednesday:

Crockpot Cool Ranch Chicken Tacos by Family Freezer

This is one of my favorite go to recipes!

You just need:

  • Chicken thighs
  • Taco Seasoning pack (or make your own taco seasoning)
  • Ranch Seasoning pack (or make your own ranch seasoning)
  • Olive oil
  • Red wine vinegar

*Throw everything in the crockpot, Cook on low all day, at least 8 hours

Holy Cow- it doesn’t get much easier than that!

Then make it into rice bowls, tacos or a salad. It is one of my go to recipes! It rotates on my menu on a weekly basis!

Thursday:

Honey Garlic Chicken in the Crockpot

  • 2 lbs boneless, skinless chicken thighs or 
  • 1/3 cup coconut aminos (healthier option for soy sauce)
  • 2 tsp balsamic vinegar
  • 1/3 cup honey
  • 2 TBL tomato paste
  • 3 cloves garlic minced
  • 1 TBL rice vinegar
  • 2 TBL tapioca or arrowroot powder (healthier option for corn starch)

Directions:

  1. Add all ingredients except the arrow root or tapioca powder to the crockpot
  2. Cook on low for about 8 hours
  3. Right before you are ready to eat, it’s time to thicken up the sauce! Remove the chicken and add the arrow root or tapioca powder- and whisk it into the liquid in the crockpot. Cook it on high for 15-30 minutes depending on the desired thickness.
  4. Put the chicken back in the crockpot and shred it up!
  5. Serve over desired rice (white, brown or cauliflower)

*sprinkle some peanuts, green onions and/or sesame seeds if desired

Friday:

Crockpot Meatloaf 

Meatloaf Ingredients

  • 2 lb  ground beef
  • 1/4 cup panko bread crumbs
  • 2 eggs, beaten
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 TBL dried parsly
  • 1 tsp salt and pepper
  • 1/2 cup ketchup (no sugar added)
  • 1 TBL coconut aminos

Side Vegetables

  • baby potatoes
  • baby carrots
  • 2-3 TBL of olive oil
  • 2 cloves garlic, minced

Instructions:

  1. Mix all of the meatloaf ingredients together and form into a loaf
  2. Spray the inside of the crockpot with non-stick spray ( my favorite is an organic olive oil option)
  3. Place the loaf in the middle of the crockpot careful that the edges are NOT touching the sides
  4. Put the veggies on the open spaces around the loaf and drizzle with olive oil
  5. Cover and cook on low for 8 hrs or until it is all the way cooked!

How yummy does that sound??

Saturday:

White Chicken Chili in the crockpot

Ingredients:

  • 2-3 lbs chicken thighs
  • 1 can white kidney beans
  • 1 can black beans
  • 1 can corn
  • 2 cans of  chicken broth
  • 1 ts. salt
  • 1 tsp pepper
  • 1 TBL chili powder
  • 2 tsp cumin
  • 1 tsp oregano

Directions:

  1. Put everything in the crockpot
  2. Once the cooking is done add- 1 cup of sour cream
  1. Then the toppings!!!
    • Cilantro
    • Shredded cheddar cheese
    • Diced avocado
    • Tortilla chips or fritos

Sunday:

Crockpot Pot Roast

Ingredients:

  • 4-5 lb pot roast
  • 1/4 c olive oil
  • 2 cloves garlic
  • 1 tsp salt
  • 1 tsp pepper
  • small yellow onion sliced
  • baby potatoes
  • baby carrots

Directions:

  1. Add all ingredients to the crockpot
  2. Cook on low 8-10 hours
  3. Enjoy!
