Have you stared weekly meal planning? If you are new to it- check out my post & step by step guide to weekly meal planning. It has been life changing for our household! There are 3 things that I do that make planning our weekly menu so much simpler:

  1. Follow my weekly meal planner guide
  2. Use 2 Home Chef meals a week (I always pick the oven ready options)

Here is our menu for the week:

Monday:

Salmon with dill crema (Home Chef Meal)

We were supposed to make this last week, but some dinners got rearranged!!

Tuesday:

Chicken Thighs with Green beans

Wednesday:

Chili & Cinnamon Roll Muffins

Crockpot Chili

  • 2 lbs hamburger
  • chili powder, garlic powder, cumin paprika, salt and pepper
  • 1 can kidney beans
  • 1 can black beans
  • 1 can diced tomatoes
  1. Cook hamburger until done
  2. Add all ingredients to a crockpot
  3. Cook on low 8 hours, let cool
  4. Put into freezer bags (if making ahead of time)

Cinnamon Roll Muffins (we tried this recipe out a couple of weeks ago from somethewiser.com and LOVED it- yum)

Thursday:

Thanksgiving

Like everyone our Thanksgiving will look a little different this year- below find our menu for the day. I am using a lot of recipes from Fed and Fit’s Thanksgiving guide

In our household we used to think Brussel Sprouts were ga-ross!! I had tried a couple of recipes and they just weren’t doing it for me. But we came across this recipe and holly moly- they are our favs! Even my kids LOVE them.

Preheat oven to 425 degrees

    • If you have large brussel sprouts, cut in half. Put them on a cookie sheet & drizzle olive oil over & sprinkle with salt
    • Roast them for anywhere from 20-40 minutes depending on the size. You want them to be crispy and slightly browned, but watch them because they can go from perfect to burnt to a crisp quickly!

While they are roasting, make the sauce-

    • 2 TBLHoney, 1 tsp Sriracha & a splash of lime juice
    • Once they are done, let them cool slightly. Then add some more salt to taste.

Friday: 

Crispy Dijon Chicken (Home Chef Meal)

Saturday:

Pork Egg roll in a bowl (Home Chef Meal)

Sunday:

Leftovers
