Make My Menu Monday~ 4/30/18

Welcome to Make My Menu Monday! I hope you had a wonderful weekend! Yesterday a friend and I meal prepped for 3 of the meals for this week. It took about 3 hours and it will be such a time-saver for this upcoming week!! Even cooking up taco meat or chopping up vegetables can make a big difference in how your evenings go!!

My Weekly Menu:
Monday:

Cool Ranch Tacos (I make a few edits to her recipe)

These are super, super easy & here is what you need~

Crockpot

Chicken Thighs

3 Tablespoons of Olive Oil

2 Tablespoons of Red Wine Vinegar

1 Taco seasoning packet (or click here for a homemade version)

1 Ranch seasoning packet (or use a homemade version-1T dried parsley, 1tsp garlic powder, 1tsp onion powder, 1tsp dried onion flakes, 3/4tsp dill, 1/2tsp pepper, and 1/2 tsp salt)

*Throw everything in the crockpot, Cook on low all day, at least 8 hours

Holy Cow- it doesn’t get much easier than that!!

Tuesday:

Almost 5 Ingredient Spaghetti Pie by Paleomg- click here for the full recipe & because Julie is hilarious and you should read her blog 🙂

Ingredients:

  • 1 spaghetti squash
  • 1 lb itallian sausage
  • diced yellow onion
  • 1 cup pizza sauce
  • 1 tsp dried basil
  • salt & pepper
  • 3 whisked eggs
  • add-ins~ mushrooms & mini pepperonis

Directions:

Prepare the spaghetti squash- click here for the easiest way to do this!!

  1. In an 8×8 baking dish add the spaghetti squash “noodles”
  2. In a large skillet cook onion until translucent then add sausage & cook until done.
  3. Add pizza sauce, spices & add ins
  4. Put sauce mix into the pan with the spaghetti squash
  5. Add the whisked eggs & mix until you can no longer see the eggs
  6. Bake in a 400 degree oven for an hour or until it is not “jiggly”

This recipe makes the BEST leftovers.

Ingredients

For the Meatloaf

  • 2-2.5 lb grass fed ground beef
  • cup almond meal/flour
  • eggs
  • 1/2 yellow onion, finely chopped
  • garlic cloves, minced
  • tablespoons garlic powder
  • tablespoons onion powder
  • 11 sliced uncured bacon, 2 sliced cooked and diced

For the BBQ Sauce

  • (6oz) can tomato paste
  • onion, minced
  • 1/2 cup apple cider vinegar
  • 1/3 cup water or broth
  • tablespoons apple butter (optional)
  • tablespoon ground mustard (no sugar added)
  • garlic cloves, minced
  • tsp cayenne pepper
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon allspice
  • pinch or two of ground cloves
  • tsp sea salt
  • 1/2 tsp freshly ground black pepper
  • splash of hot sauce, to taste

Directions:

  1. Preheat oven to 400 degrees.
  2. Dice up your 2 pieces of baconand throw in a frying pan to cook up for about 5-7 minutes.
  3. While the bacon is cooking, mix together all other ingredients (except for your 9 slices of bacon) in a large bowl. Once your 2 pieces of bacon are done cooking, add them to the bowl and fully incorporate into the mix.
  4. Now grab 2 bread loaf pans and add an equal amount to both. Top the meat off with bacon.
  5. Cook for 45 minutes.

BBQ Sauce Directions:

  1. In a large frying pan, add some olive oil (or other fat) and brown the onion–about 5 minutes.
  2. Add the garlic and stir together to cook a bit more.
  3. Add all other ingredients and mix together, then let simmer for 10-15 minutes (or longer if you have time-I usually want to eat as quick as possible).
  4. Now plop that sauce on top of your meatloaf and store the rest in a cute Tupperware container in the fridge.

Hamburgers with broccoil & sweet potatoes

Making sweet potatoes in the crockpot in 3 easy steps:
  1. Wash sweet potatoes
  2. Wrap them in foil
  3. Place in crockpot & cook on low 6-7 hours
