Make My Menu Monday 3/19/18

On to my Weekly Menu:
Monday:

Pad Thai Chicken Wings- recipe from PaleOMG

Here is PaleOMG’s recipe- the few edits I make are in the parenthesis beside in pink

Ingredients

  • 2 pounds chicken wings (I ended up using drumsticks, 2 stores that I went to were completely out of wings!)
  • salt and pepper, to taste

For the pad thai sauce

  • 1/3 cup sunflower seed butter (I will use peanut butter because I love peanut butter)
  • 1/3 cup water
  • 2 tablespoons honey
  • 1 tablespoon coconut aminos
  • 1 tablespoon lime juice
  • 1 tablespoon sriracha
  • 1 tablespoon sesame oil
  • 2 teaspoons fish sauce
  • 1 teaspoon fresh ginger
  • 2 cloves of garlic, minced

For the toppings

  • 2 jalapeños, thinly sliced (not using these because of I’m allergic 🙁
  • 1/4 cup cashews, chopped
  • 3 tablespoons sriracha
  • red pepper flakes, to taste
  • 1/2 lime
  1. Place an oven rack in the top position and preheat the oven to 400 degree F. Line a baking sheetwith foil and place a wire rack on top. Grease wire rack. Place the chicken wings on the wire rack and sprinkle with the salt and pepper. Bake for 50 minutes or until crispy.(I don’t have a wire rack so I just line the baking sheet with foil and cook for about 5 minutes longer, also with the drumsticks I cooked for about an hour)
  2. When wings have about 10 minutes left, place all ingredients for the pad thai sauce into a blender and blend until smooth. Set aside.
  3. Pour sauce in a large bowl then add wings to the bowl and toss to coat. Then sprinkle with jalapeños,(not using these) cashews, sriracha and red pepper flakes and squeeze fresh lime juice on top!
  4. Wash your hands then eat up and prepare to have extra dirty afterwards!

Tuesday:

Spaghetti Pie- another recipe from PaleOMG

Ingredients

  • 1 large spaghetti squash (about 600 grams)
  • 1 pound italian sausage
  • 1/2 yellow onion, diced
  • 1 cup pizza sauce (no sugar added)
  • 1 teaspoon dried basil
  • salt and pepper, to taste
  • 3 eggs, whisked
  • (optional: add anything you like with pizza: veggies, basil, even cheese if you do primal)
  1. Preheat oven to 400 degrees.
  2. Cut spaghetti squash in half lengthwise. Place spaghetti squash cut side down on a baking sheet and bake for 20-25 minutes or until the skin of the squash gives when you press on it. Then reduce oven heat to 350 degrees.
  3. Once squash is done cooking, remove threads and place in a greased 8×8 baking dish.
  4. Place a large pan over medium heat. Add italian sausage and onion. Cook until pink no longer remains in the sausage and it is broken up into pieces.
  5. Add pizza sauce, dried basil and salt and pepper to the pan and mix well.
  6. Add sausage mixture to the 8×8 dish and mix well with spaghetti squash threads.
  7. Lastly, add whisked eggs to the baking dish and mix everything together until you can no longer see the eggs.
  8. Place in oven and bake for 1 hour or until the top of the mixture forms a slight crust that doesn’t give when you press on it in the middle of the dish.
  9. Let rest for 5 minutes before serving.

During my meal prep session yesterday we tried out this recipe from Fedandfit.com

Southwestern Breakfast Frittata

Cooked it all yesterday and cut it into single servings to make heating it up for breakfast quick and easy!!!
