How meal prepping helps bring joy to my life

During my year of Joy (see my post on my word of the year here), it is really fun to highlight the joy in my life. One of my observations that I have made is~ the weeks that we do extra prep work- meal plan and meal prep, our life is much more joyful. There is less stress, less worry- more joy!!! So on today’s blog these are some of the things that we have done to prep and plan for this week:

Cook ahead:


Turkey burgers– make patties and pan fry

Steak strips– add olive oil, spices and pan fry


Sweet potato hash

  • Sweet potatoes
  • Olive oil
  • Garlic
  • Salt & Pepper

Dice sweet potatoes

Heat olive oil in a pan & throw in the potatoes

Add diced garlic and salt & pepper

Cook until potatoes are tender

Other Veggies that I get:

Frozen Peas

Frozen Green Beans

Head of lettuce- wash and cut into strips

Meal #1

This one is one of my favorite and most “go-to” recipes. I don’t do any pre-cooking here, everything just goes in the crockpot in the morning.

Cool Ranch Tacos (I make a few edits to her recipe)

These are super, super easy & here is what you need~


  • Chicken Thighs
  • 3 Tablespoons of Olive Oil
  • 2 Tablespoons of Red Wine Vinegar
  • 1 Taco seasoning packet (or click here for a homemade version)
  • 1 Ranch seasoning packet (or use a homemade version-1T dried parsley, 1tsp garlic powder, 1tsp onion powder, 1tsp dried onion flakes, 3/4tsp dill, 1/2tsp pepper, and 1/2 tsp salt)

*Throw everything in the crockpot, Cook on low all day, at least 8 hours

Holy Cow- it doesn’t get much easier than that!

Meal #2

Steak Fajita bowls

  • Using the pre-cooked steak
  • Add rice of your choice (cauliflower, white rice or brown rice, etc)
  • Then add veggies and cheese

Meal #3

Turkey Burgers with Sweet Potato Hash (pre-cooked) and peas

Meal #4

Steak Salad

  • Using a base of whatever lettuce you prefer (romaine still scares me a little so I usually get a head of lettuce)
  • Add pre-cooked steak strips
  • Cucumbers, cherry tomatoes, feta and dressing

Meal #5

Chicken Rice bowl

  • Using the Chicken from the Chicken Ranch Taco meat
  • The base of the bowl pick a rice (Cauliflower, White rice, Brown rice, etx)
  • Add veggies, cheese and avocado

Meal #6

Southwest Breakfast Frittata by Fed & FIt

Meal #7

Greek Turkey burgers and green beans

  • add greek dressing and Feta to the pre-cooked Turkey Burgers
