Real Life, Real Menu~ 4/20/20

With everything  a little out of sorts right now, planning out a weekly menu is even more important! I don’t know about you, but especially in times of chaos, there is something comforting about controlling the controlable.  Things like making my bed, sticking with a routine, meal planning, etc. give me comfort to know that not everything is running wild. Now on to the weekly menu!

Monday:

Spaghetti with  Spaghetti Squash Noodles
  • 1 lb of hamburger
  • 1 lb of sausage
  • 1 jar of spaghetti sauce
  • oregano, parsley, garlic
  • Spaghetti squash

Cook Spaghetti squash

Easiest way to prepare Spaghetti Squash

  1. Wash your squash
  2. Pierce it several times with a knife
  3. Put it in the crockpot with 1 cup of water or broth
  4. Cook on low for 4-6 hours
  5. Remove from the crockpot- it will be hot so BE CAREFUL!!
  6. Cut it in half and shred the noodles

Cook hamburger and sausage in a skillet until done.

Using pork sausage in Italian dishes like spaghetti or lasagna, gives it such a great flavor!

Crockpot Shredded BBQ Chicken by The Freezer Family

I just love making meals using my Crockpot there is something so satisfying about walking through the door from work and having a meal all ready to go! 

Thursday:

Pizza 2 ways- low carb and traditional

For toppings:

Sauce

Cheese

Hamburger

OR

Cauliflower Crust Pizza 
  • Riced Cauliflower
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp parsley
  • 1 tsp basil
  • spaghetti sauce
  • hamburger
  • cheese

Cook the riced cauliflower according to package

Drain the cauliflower rice really well. The more water you can get out, the crispier the crust will be!

Add in the egg

Put on a cookie sheet on aluminum foil & flatten it out

Cover with an egg wash and then seasonings

Bake for 16 min at 450 , then flipped and baked for another 5 min

Put desired sauce & toppings on the top and bake for another 8 min or so

Pork Shoulder Roast

Have you heard of the Pioneer Woman? I love her show on Food Network. She doesn’t typically make healthy meals, but I have learned to adapt them a little, by making some simple changes. I personally make this into a crockpot meal!

The edits I make are:

When making the marinade/sauce I go step by step, per the recipe except I sub out the sugar- instead of brown sugar, I use coconut sugar
To make it into a crockpot meal, after making the sauce I coat the entire pork roast in the crockpot, flipping it around in it so it coats all sides. Then I put it on low and cook it all day long, over 12 hours
It makes the best shredded pork EVER! You can put it on tortillas, make it into a bowl with rice,or cauliflower rice, or just eat it by itself really- it’s that good.
