Make My Menu Monday~ 4/23/18

It’s another Make My Menu Monday & another week full of meals! My favorite thing is finding shortcuts & things that make meal planning & prepping EASIER! Monday:

Cool Ranch Tacos (I make a few edits to her recipe)

These are super, super easy & here is what you need~

Crockpot

Chicken Thighs

3 Tablespoons of Olive Oil

2 Tablespoons of Red Wine Vinegar

1 Taco seasoning packet (or click here for a homemade version)

1 Ranch seasoning packet (or use a homemade version-1T dried parsley, 1tsp garlic powder, 1tsp onion powder, 1tsp dried onion flakes, 3/4tsp dill, 1/2tsp pepper, and 1/2 tsp salt)

*Throw everything in the crockpot, Cook on low all day, at least 8 hours

Holy Cow- it doesn’t get much easier than that!!

Tuesday:

Chicken rice bowl – pre-make these by cooking up whatever meat you want to use, then layer in a mason jar. Put wet ingredients(like salsa, beans, etc) on the bottom and then continue with the rest of the ingredients. Side note~ These were supposed to be salad jars, BUT we found out right before we were making them that ALL romaine lettuce had been recalled. YIKES. So we made them without putting in the lettuce. So what I plan on doing is cooking some rice and then putting the ingredients over the rice!

if you don’t know what these are you are truly missing out.  Imagine a  traditional BLT’s but you add an egg (fried) and avocado. They are pretty much one of the most amazing things you’ll ever have, so you should definitely try it if you haven’t.
