Make My Menu Monday
It has been 1 week since my Hamstring repair surgery and that means only 5 weeks left of non weight bearing living on crutches life! Even when something happens that you aren’t expecting and your life takes a temporary detour, people still have to eat and I still need to meal plan! 🙂 Cooking on crutches, when you can’t put weight on your left leg is not ideal. So luckily I have a multitude of amazing people in my life who are helping put everything together & who I can not thank enough. Before surgery I prepared some meals and bought some frozen veggies & such to hopefully make life easier. My wonderful work family is also bringing over 2 meals a week so that is a lifesaver in itself!! I am literally surrounded by such loving and giving people, my heart is full to the brim. The Plan…
Monday:
Chicken Rice Bowls
Previously I cooked chicken thighs in the crockpot all day, shredded the meat and froze it.
For this meal simply~
- Make cauliflower rice. To keep it simple I have found some frozen versions that I LOVE that I use for this recipe. Put in a bowl!
- Reheat the precooked chicken
- Add it to the cauliflower
- Top with extra veggies, cheese or some ranch dressing
Tuesday:
Tacos
Previously I cooked up some taco meat. Here is my easy taco seasoning recipe!

This will be similar to the chicken rice bowls because I make this into a bowl as well but you can sub out tortillas like my kids will do!
Wednesday:
Irish Beef Stew- this is one of the yummy meals my co-worker is brining so I am not sure about the recipe

Tomato soup and salad
Another amazing meal from a co-worker 🙂 As far as salad goes, I try to keep ingredients for a salad on hand at all times! I make a lot of salads for lunch, so I like to have lettuce washed and ready, veggies like cucumbers, cherry tomatoes, etc & feta cheese. This makes putting together a salad quick and easy!
Saturday:
Chili (This is another recipe that I made ahead of time)
- 2 lbs hamburger
- chili powder, garlic powder, cumin paprika, salt and pepper
- 1 can kidney beans
- 1 can black beans
- 1 can diced tomatoes
- Cook hamburger until done
- Add all ingredients to a crockpot
- Cook on low 8 hours, let cool
- Put into freezer bags (if making ahead of time)
For this meal, we can just put the chili in the crockpot on low in the morning and it will be all ready to go by dinner!
Sunday:
Meatloaf
- 1 lb hamburger
- 1 lb sausage
- 1 egg
- garlic powder, salt and pepper
- 1/4 c almond flour
- Mix all ingredients together
- Put in a large loaf pan
- Cook at 350 for 1 hr 15 minutes
