Our yummy weekly dinner plan for 8/2/21:

When making our yummy weekly dinner, I wanted to share one of my tips, it is: plan for leftovers. It’s like a freebee night. There is no planning or preparing, just heat up! If you have a busy or late night, this kind of meal works great! It also keeps from having to throw out food- double bonus!! Sometimes we actually end up having leftovers 2 times a week. What is your favorite leftover meal?

Monday:

Baked Pasta dish

  • 12 ounces of noodles (I used rigatoni)
  • 1 lb ground beef
  • 1 jar of spaghetti sauce
  • 1 can diced tomatoes
  • 3 cloves of garlic
  • 1 tsp oregano
  • 1 tsp parsley
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 1/2 cup mozzarella
  • 2 eggs
  • 1/4 cup parmesan
  1. Cook pasta according to package
  2. While cooking the pasta cook the ground beef
  3. Add diced garlic cloves
  4. Once the ground beef is cooked through, add Spaghetti sauce, can of tomatoes and spices
  5. After the pasta cooks, whisk the eggs and mix with the parmesan cheese, then mix with the noodles
  6. Put the noodles in a 9×13 sprayed baking dish, top with the meet mixture and the mozzarella cheese
  7. Bake at 350 degrees for 20 minutes or until heated through and cheese is melted

Tuesday:

Instant Pot Chicken Tacos

Put about 1 cup of water to the bottom of your Instant Pot

  • Add ground chicken thighs and diced garlic
  • Sprinkle the taco seasoning over the meat (I like to use my homemade recipe)
  • Using the manual option on high on your Instant Pot cook for 20 minutes (make sure that the dial is turned to sealed) Make sure the Instant Pot is not under a cabinet and has plenty of space to release the pressure at the end
  • Once the time is up turn the dial to release the pressure and let the steam finish releasing
  • Then take off the lid and change it to saute, make sure the chicken is cooked through and let it thicken (about 5-6 minutes)
  • Once it’s all ready serve with tortillas, rice or on salad
  • Top with tomatoes, cheese avocado, and sour cream!
