Since I was a little girl, Christmas Eve has always meant soup! As I grew up and had kids, the tradition has continued! I wanted to share with you the best soups to make for Christmas Eve!
The best soups to make for Christmas eve
Instant pot Chili
- 2 lbs hamburger
- chili powder, garlic powder, cumin, paprika, salt and pepper
- 1 can kidney beans
- 1 can black beans
- 1 can diced tomatoes
- Turn your Instant pot to saute and cook the hamburger
- Add spices, beans and tomatoes and turn on to the recommended setting for your Instant pot
- Cook for 20 minutes in Instant pot
- Serve right away or use keep warm setting
- Add desired toppings
Chicken and dumpling soup
This year since we can’t all be together, I am making my Aunt’s Chicken and Dumpling soup- I haven’t ever made this recipe but my aunt makes it EVERY Christmas eve, it wouldn’t be the same without it! The recipe came from my grandpa originally.
- 3 lb broiler-fryer Chicken or 3-4 lb stewing chicken
- 1/2 onion
- Bay leaf
- Carrots
- Celery
- 2 TBL peppercorns
- Rinse chicken
- Put in a large pot and cover it with water
- Add the remainder of the ingredients
- Bring to a boil- reduce and simmer
- For the fryer 1 1/2-2 hours
- For the stewing chicken 2-3 hours
- Let the broth cool somewhat, then pour the pot contents into a colander, while draining it into a large bowl
- Take the chicken off the bones, shred or cut into small pieces- save to put in the soup broth later
- After the broth is cooled down- put in fridge. The next day skim off the fat as desired
- The next day (or when you are making the soup)- heat the broth
- Add any veggies
- Add the chicken
- When the broth is boiling- add the dumplings (see recipe below)
German-Russian Dumpling recipe
- 3 eggs, beat slightly
- 1/2 tsp salt
- 1/2 c (1 stick) melted butter- let cool
- 1 1/2 cup flour
- Mix together.
- After all mixed, add in a little more flour (1/8-1/4 cup), so it’s a little heavier dough
- When the broth is boiling, drop it in by spoonfuls
- Mounded teaspoons work so that the dumpling cooks fast
Enjoy!
Chicken tortilla soup
- Chicken thighs
- 1 can tomatoes
- 1 can of black beans
- 1 cup chicken stock
- Cook chicken thighs with olive oil in crockpot on low 8 hours (or until done)
- Add the rest of the ingredients & shred chicken
- Serve & top with sour cream, avocado, shredded cheese

The ingredients of this soup sound a little weird but it is so delicious!
