Our weekend was full of fun events including a full day of band fun- parade and competition and celebrating my Grandma’s 93rd Birthday! Also I got REALLY into podcasts this past week. Does anyone else just LOVE them? Oh my goodness I am amazed at how much more enjoyable it makes driving!!!

Band competitions are basically like getting to see multiple halftime shows. And halftime shows are the best 🙂
My Grandma turned 93! Aren’t grandmas just the sweetest!
Okay… on to the menu for the week!
Monday:
Left overs- I made a big batch of a pork roast over the weekend. It makes great leftovers!
Tuesday:
Taco Lasagna Casserole~ new recipe from PaleOMG. I will modify it slightly since I am allergic to jalapeños, but other than that it looks amazing!
Wednesday:
Peanut Butter Chicken- I made this in a previous week (about a month ago), but look on my blog for the full recipe on Wednesday morning!
Thursday:
Breakfast for dinner
Friday:
Chili & Cinnamon apple muffins
The basic recipe I follow is:
- 2-3 lbs of meat this time I wanted to make extra so I used 2 lbs ground beef and 1 lb of ground pork (you can also use bison, bacon, or steak)
- 1/2 yellow onion & clove of garlic (diced)
- 2 cans of tomato sauce
- 1 can of tomatoes
- 2 cans of beans (I used chili & black beans)
- spices- a mixture of chili powder, garlic powder, paprika, salt & pepper.
Heat pan with olive oil & sauté diced onion and garlic
Add ground beef and pork until cooked through
Add beans, sauce, tomatoes, & spices
If you can put all in a crockpot and let it all cook together for several hours
Saturday:
Crockpot Chicken Enchilada Sweet Potatoes This is a new crockpot recipe I am trying!
Sunday:
BLEATS- BLT’s with some extras- Egg and Avocado! We make these on Ezekiel Bread
So there you have it! I am trying to try 1 new recipe a week, but actually I am trying 2 new recipes this week. I will be sure to let you know how they worked out!
