My Favorite Ways to Plan Dinner

What does dinner time look like at your house? Is it organized chaos or just chaos- maybe a little in between? If you are ready to have a more relaxed evening- try out my favorite ways to plan dinner.

  1. Keep it simple- there is no need to complicate it, especially if you are just starting out. Try things like soup and sandwiches, breakfast for dinner, whatever is easy to make. Remember the goal is to have dinner on the table, not a gourmet meal.
  2. Prioritize- learn what is important for your family or household. Find the shortcuts that work for you. My favorite short cuts to plan dinner’s are:
    • Using Home chef for 2 meals each week
    • Having leftover night 1/week
    • If you can, cook a batch of meat over the weekend- it could be used for tacos, spaghetti or chili
  3. Set aside time to plan and grocery shop and use what you have (don’t forget to look in your refrigerator, freezer and pantry)
  4. Enjoy!

Cool Ranch Chicken Tacos by Family Freezer

This is one of my favorite go to recipes!

*Throw everything in the crockpot, Cook on low all day, at least 8 hours

Holy Cow- it doesn’t get much easier than that!

Thursday:

Breakfast bowls-

Ingredients

Instructions:

  • Scramble eggs and cook them to preference. My favorite way is with some salt and pepper!
  • Cook bacon-  I use a broiler pan, bake at 425 degrees F for 10-15 minutes depending on your oven
  • Put Scrambled Eggs in bowl as the base
  • Add desired prepared toppings
  • Enjoy!

Tacos bowls

Knowing everything that is in my taco seasoning is so reassuring. I know there are no questionable ingredients or preservatives in it- AND it only takes a minute to make!

  • 1 TBL chili powder
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp crushed red pepper flakes
  • 1/2 tsp paprika
  • 1/2 TBL cumin
  • 1 tsp sea salt
  • 1 tsp black pepper

Cook hamburger until done & then add the taco seasoning to it. Add 3/4 cup water and let it simmer until the water has evaporated

Then layer to your preference

  • Taco meat
  • Beans- black or refried
  • Cauliflower rice or traditional rice
  • Lettuce
  • Tomatoes- diced
  • Shredded cheese
  • Avocado
  • Salsa
  • Sour cream
  • Cilantro

After you have everything all layered- mix and enjoy!!

Honey glazed Ham

Lasagna~

This is my mama’s recipe and I LOVE it. I started making it with a healthy twist. Instead of lasagna noodles I sub zucchini noodles.

  •  1 lb ground beef
  • 1 clove garlic
  • 1 TBL parsley
  • 1 TBL basil
  • 1 1/2 tsp salt
  • 1 can tomatoes
  • 2 six ounce cans tomato paste
  • 10  ounce lasagna noodles **** subbing zucchini noodle for a healthy swap!
  • 3 C cottage cheese
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 beaten eggs
  • 2 TBL parsley
  • 1/2 C shredded parmesan
  • 1 lb mozzarella sliced
  1. Brown meat, add next 6 ingredients. Simmer, uncovered until sauce is thick (approximately 30 minutes)
  2. If using traditional noodles cook them & drain. If using Zucchini noodles thinly slice zucchini
  3. Combine cottage cheese with egg, seasonings, parmesan cheese
  4. Place 1/2 noodles in 9 x 13 pan
  5. Spread 1/2 cottage cheese mixture
  6. Then 1/2 of mozzarella cheese
  7. Then 1/2 meat mixture
  8. Repeat layers
  9. Bake at 375 degrees for 30 minutes
  10. Let stand 15 minutes

This dish makes the BEST leftovers!!
