Happy Monday!
Planning meals out for the week is a great way to save money! By knowing what you are going to eat all week, you avoid random trips to the grocery store which usually includes impulse buys!
My meal planning printable and grocery list will help simplify it even more!!

Our meals this week include:
Monday–
Crockpot soup & garden salad
For this meal- pick from one of my favorite soup recipes from Love and Lemons & pair with a big salad. My favorite way to do a filling, healthy salad is start with a base of your desired lettuce or greens blend. Next top with any veggies you desire, add beans like black beans or chickpeas, and your favorite toppings like feta cheese, nuts and seeds. Keep it healthy by picking a dressing that won’t add a bunch of calories or unhealthy fat. I like to drizzle my salads with olive oil, balsamic vinaigrette, some fresh herbs (dill and basil) and then garlic salt and black pepper.
Tuesday–
Tacos
One of the things that I love about tacos is the versatility to use whatever ingredients you want. It is super easy to make them as a healthier option too!! They can easily be transformed into a rice bowl or salad.
For this meal start with a base and chose your own adventure!!
Base: taco shell, rice or salad
Taco shells: not all taco shells are created equal, so like anything I will emphasize to look at the ingredients. If you are wanting to make a healthier version, then stick to the least amount of ingredients AND ones you can pronounce and know what they are. My 2 go-to tortillas are sprouted like Ezekiel, Siete Chickpea tortillas (these are a great option if you are sensitive to corn or gluten), or straight corn tortillas.
Rice: it’s one of those things that is easy to overdo when it comes to carbs. If you are looking at making a healthier option try cauliflower rice or brown rice.
Salad: pick your favorite lettuce, spinach or other greens
Add veggies
This is where you can really make these tacos a nutrient dense option instead of a calorie dense option! Any veggie that you like is great to use, here are my favorites!
- Shredded lettuce
- Tomatoes
- Cucumbers
- Corn
- Sweet Potatoes (diced and cooked)
- Cauliflower
Add protein
- Meat- hamburger, chicken, or fish
- Black or pinto beans
- Grain- Quinoa
- Veggie taco meat- try this recipe from Love and Lemons
- Shiitake Taco “Meat”
- 1 tablespoon extra-virgin olive oil
- 8 ounces shiitake mushrooms, stemmed and diced
- 1 cup crushed walnuts
- 1 tablespoon tamari
- 1 teaspoon chili powder
- ½ teaspoon balsamic vinegar
- Sea salt and freshly ground black pepper
- Shiitake Taco “Meat”
Wednesday-
Chicken Thighs with sweet potatoes and roasted broccoli
Thursday
Spaghetti pie with salad (click here for a recipe from one of my favorites PALEOMG)
Friday-
Chicken Fajitas
Saturday
Leftovers
Sunday-
BLEATS (BLT’s with fried Egg & Avocado) This has become our favorite Sunday meal!
