It’s hard to believe that Christmas has come and gone but here we are~ and with only 1 week left of 2018!! These short weeks always throw me off, sometimes it’s hard to remember what day it is!! So I am bringing you 3 quick and easy meals for the week. If you end up having a few hours to do some meal prepping, these are great recipes to make ahead and then just heat and eat!!!
Meal #1
Hamburgers with sweet potato hash and a salad:
Hamburger patties~
super easy to make up and cook in the skillet. Just a simple seasoning of salt, pepper and garlic.
Sweet Potato hash~
Dice up 2 sweet potatoes
Add olive oil or coconut oil to a skillet, heat and then add sweet potatoes. Put in some diced garlic, salt and pepper. Stir frequently and cook until potatoes are tender (easily poked with a fork, is the rule I use)
Salad~
I have been using iceberg lettuce after the issues with romaine. Then just add your favorites, dice up some carrots, cherry tomatoes, cucumbers, feta cheese, etc.
Having a big batch of salad ready makes it easy to get in those veggies. You can also prep, but keep all of the ingredients separate so they don’t get mushy.
Meal #2
Cool Ranch Tacos (I make a few edits to her recipe)
These are super, super easy & here is what you need~
- Chicken Thighs
- 3 Tablespoons of Olive Oil
- 2 Tablespoons of Red Wine Vinegar
- 1 Taco seasoning packet (or click here for a homemade version)
- 1 Ranch seasoning packet (or use a homemade version-1T dried parsley, 1tsp garlic powder, 1tsp onion powder, 1tsp dried onion flakes, 3/4tsp dill, 1/2tsp pepper, and 1/2 tsp salt)
*Throw everything in the crockpot, Cook on low all day, at least 8 hours
Holy Cow- it doesn’t get much easier than that!
Meal #3
Almost 5 Ingredient Spaghetti Pie by Paleomg- click here for the full recipe & because Julie is hilarious and you should read her blog

Ingredients:
- 1 spaghetti squash
- 1 lb itallian sausage and 1 lb ground beef
- 1 diced yellow onion
- 1 cup pizza sauce
- 1 teaspoon dried basil
- salt & pepper to taste
- 3 eggs, whisked
- add ins to your liking (pepperoni, red bell peppers, etc)
Directions:
Prepare the spaghetti squash- click here for the easiest way to do this!!
- In an 8×8 baking dish add the spaghetti squash “noodles”
- In a large skillet cook onion and then add sausage & ground beef~ cook until done.
- Add pizza sauce, spices & add ins
- Put sauce mix into the pan with the spaghetti squash
- Add the whisked eggs & mix until you can no longer see the eggs
- Bake in a 400 degree oven for an hour, make sure that the middle is firm.
This recipe makes the BEST leftovers.
