Happy Monday I mean Wednesday 🙂 Whoops! This week is just flying by! Last week just seemed to come and go with lots of fun things!
Our son was in a musical! It was awesome and it played 3 nights in a row, he was exhausted but loved it so much! On Sunday he slept until after 1pm!
We also had a college visit, with our daughter. It is so hard to believe & it was a fun but also terrifying day!
Of course Halloween was full of yummy treats (but no tricks here)!
Monday:
Paleo Cashew Chicken Fingers. It is a recipe from Julie Bauer’s Paleo Cookbook & it is delicious! If you do not have any of her cookbooks, I highly recommend them!! She runs PaleOMG- a blog that is one of my favorites! Â
Tuesday:
Halloween tradition at our house is Chili, mummy dogs, & a veggie skeleton. We also had fruit and brownies & Halloween candy of course 🙂
The basic Chili recipe I follow is:
- 2-3 lbs of meat this time I wanted to make extra so I used 2 lbs ground beef and 1 lb of ground pork (you can also use bison, bacon, or steak)
- 1/2 yellow onion & clove of garlic (diced)
- 2 cans of tomato sauce
- 1 can of tomatoes
- 2 cans of beans (I used chili & black beans)
- spices- a mixture of chili powder, garlic powder, paprika, salt & pepper.
Heat pan with olive oil & sauté diced onion and garlic
Add ground beef and pork until cooked through
Add beans, sauce, tomatoes, & spices
If you can put all in a crockpot and let it all cook together for several hours
A little extra bonus I did this time, is in the morning I added some steak to the crockpot, put in some apple cider vinegar and olive oil and cooked it on low all day. Then I shredded that up and used it in the Chili along with hamburger & some bacon- it was pretty amazing!!
Wednesday:
BLEATS- if you don’t know what these are you are truly missing out.  Imagine a  traditional BLT’s but you add an egg(fried) and avocado. They are pretty much one of the most amazing things you’ll ever have, so you should definitely try it if you haven’t.
Thursday:
Cool Ranch Tacos (I make a few edits to her recipe)
These are super, super easy & here is what you need~
Chicken Thighs
3 Tablespoons of Olive Oil
2 Tablespoons of Red Wine Vinegar
1 Taco seasoning packet (or click here for a homemade version)
1 Ranch seasoning packet (or use a homemade version-1T dried parsley, 1tsp garlic powder, 1tsp onion powder, 1tsp dried onion flakes, 3/4tsp dill, 1/2tsp pepper, and 1/2 tsp salt)
*Throw everything in the crockpot, Cook on low all day, at least 8 hours
Holy Cow- it doesn’t get much easier than that!!

Pan-fried hamburgers with brussel sprouts
In our household we used to think Brussel Sprouts were ga-ross!! I had tried a couple of recipes and they just weren’t doing it for me. But we came across this recipe and holly molly- they are our favs! Even our kids LOVE them.
Preheat oven to 425 degrees
If you have large brussel sprouts, cut in half. Put them on a cookie sheet & drizzle olive oil over & sprinkle with salt
Roast them for anywhere from 20-40 minutes depending on the size. You want them to be crispy and slightly browned, but watch them because they can go from perfect to burnt to a crisp quickly!
While they are roasting, make the sauce-
2 TBLHoney, 1 tsp Sriracha & a splash of lime juice
Once they are done, let them cool slightly. Then add some more salt to taste.
