Happy Monday! As the week comes to a start, I try to start my intention to have a peaceful and joyful week. I have learned that I have no control over what the week might bring, but when my mind is at peace everything goes better. In the beginning of the day I say this prayer…
Abiding God, grant me peace of mind that I may face all that this new day will bring.
Teach me to behave sincerely and reasonably, toward every member of my family and all other human beings, that I may not cause confusion and sorrow to anyone. Bestow upon me strength to endure the fatigue of the day and all it's passing events. Guide me and teach me to pray, to believe, to hope, to suffer, to forgive, and to love. Amen. ~Russian orthodox morning prayer (adaption)
Monday:
Spaghetti with Spaghetti Squash “noodles”
I have found such an easy way to prepare Spaghetti Squash:
- Wash your squash
- Pierce it several times with a knife
- Put it in the crockpot with 1 cup of water or broth
- Cook on low for 4-6 hours
- Remove from the crockpot- it will be hot so BE CAREFUL!!
- Cut it in half and shred the noodles

Thursday:
Cool Ranch Chicken
- Chicken Thighs
- 3 Tablespoons of Olive Oil
- 2 Tablespoons of Red Wine Vinegar
- 1 Taco seasoning packet (or click here for a homemade version)
- 1 Ranch seasoning packet (or use a homemade version-1T dried parsley, 1tsp garlic powder, 1tsp onion powder, 1tsp dried onion flakes, 3/4tsp dill, 1/2tsp pepper, and 1/2 tsp salt)
*Throw everything in the crockpot, Cook on low all day, at least 8 hours
Holy Cow- it doesn’t get much easier than that!

Saturday:
Wedding food 🙂
Sunday:
Sweet potato pork bowls
Cook sweet potatoes (I usually end up microwaving mine)
Open them up and smash down the insides
Add Pork Sausage & veggies of your choice- top with avocado and ranch dressing!!
