Have I told you lately how much I love my crockpot? We would go hungry or eat fast food all the time without it!! Well… here is my weekly menu!!

Have you heard of the Pioneer Woman? I love her show on Food Network. She doesn’t typically make healthy meals, but I have learned to adapt them a little, by making some simple changes. I personally make this into a crockpot meal!
The edits I make are:
When making the marinade/sauce I go step by step, per the recipe except I sub out the sugar- instead of brown sugar, I use coconut sugar
To make it into a crockpot meal, after making the sauce I coat the entire pork roast in the crockpot, flipping it around in it so it coats all sides. Then I put it on low and cook it all day long, over 12 hours
It makes the best shredded pork EVER! You can put it on tortillas, make it into a bowl with rice,or cauliflower rice, or just eat it by itself really- it’s that good.
Thursday:
Ingredients:
- 1 spaghetti squash
- 1 lb itallian sausage
- diced yellow onion
- 1 cup pizza sauce
- 1 tsp dried basil
- salt & pepper
- 3 whisked eggs
- add-ins~ mushrooms & mini pepperonis
Directions:
Prepare the spaghetti squash- click here for the easiest way to do this!!
- In an 8×8 baking dish add the spaghetti squash “noodles”
- In a large skillet cook onion until translucent then add sausage & cook until done.
- Add pizza sauce, spices & add ins
- Put sauce mix into the pan with the spaghetti squash
- Add the whisked eggs & mix until you can no longer see the eggs
- Bake in a 400 degree oven for an hour or until it is not “jiggly”
This recipe makes the BEST leftovers.

Slow cooker Garlic Chicken Drumsticks- by Paleo hacks
2 lbs chicken drumsticks
4 TBS chopped garlic
2 sprigs of Rosemary3 TBS olive oil
1/2 C chicken stock
In a large ziplock bag combine all ingredients except chicken stock. Add to crockpot and then pour chicken stock over. Cook on high for 4 hours, or low all day. Put on a sheet pan and broil on each side approx 3 minutes per side.

BLEATS- if you don’t know what these are you are truly missing out. Imagine a traditional BLT’s but you add an egg(fried) and avocado. They are pretty much one of the most amazing things you’ll ever have, so you should definitely try it if you haven’t.
