Easy weekly dinners

Hi friends! Join us for our weekly menu and meal planning. There is nothing like making a simple and delicious weekly menu. If a recipe is overly complicated, or takes too much time, it might leave you feeling frustrated and end up grabbing something in the drive thru instead. Check out our easy weekly dinners below.

If you are wondering what to make for dinner- try these tips

  1. Simplify your meal planning- grab a rotisserie chicken or pre-made side from the grocery store. Many grocery stores have meals ready to put in the oven. Take advantage of these options and make your life easier!
  2. Cook in batches- cook up a bunch of taco meat- divide it out and freeze. Each week you have a meal already made- just heat up in the crockpot during the day! Check out these easy freezer meals from Happy Money Saveror for some vegetarian options take a look at Hey Nutrition Lady
  3. Sit down to meal plan each week- then you only have to make the decision 1 time what you are having for dinner, instead of 7 times.

Monday:

Mediterranean Hummus wraps by Fed and Fit

Tuesday:

Tacos

We really love tacos! They make an appearance at least once a week. Tacos are really versatile and can be made in tortillas, as a salad or rice bowl.

Start with the base: Tortillas, lettuce or rice

Add your toppings:

  • Chicken, ground beef, or tofu
  • Black beans
  • Refried beans
  • Diced tomatoes
  • Lettuce
  • Shredded cheese
  • Sour cream

I love making my own taco seasoning! We know exactly what’s in in, it’s easy to make, saves money and no chemicals or preservatives.

Veggie Burgers by Cookie and Kate

These are really,  really good! You got to try them 🙂

Saturday:

Buddah Bowls

  • 2 Sweet potatoes, diced & cooked
  • 1 cup of lentils, cooked according to package
  • 1 cup rice, cooked
  • Roasted cauliflower
  • Black Beans
  • Cherry tomatoes, halved
  • Avocado, cubed

I like to cook all of these parts ahead of time and then it is super easy to warm up and build your bowl.

Sunday:

Baked Potato Bar

Pick your potato (sweet, red, yukon gold, russet)

Cook potatoes (microwave, crockpot, or oven)

Add your toppings:

  • Chicken, ground beef, jack fruit
  • Black beans
  • Broccoli
  • Sour Cream
  • Corn
  • Avocado,
  • Salsa
  • Cilantro
  • Cheese
