Taco Tuesday!! This is my favorite taco seasoning recipe. Making it myself let’s me have control over what goes in it!

Wednesday:
Chicken Rice Bowls
Previously I cooked chicken thighs in the crockpot all day, shredded the meat and froze it.
For this meal simply~
- Make cauliflower rice. To keep it simple I have found some frozen versions that I LOVE that I use for this recipe. Put in a bowl!
- Reheat the precooked chicken
- Add it to the cauliflower
- Top with extra veggies, cheese or some ranch dressing
Thursday:
Cheeseburger slow cooker soup~
- Hamburger
- Diced potatoes
- Baby Carrots
- Black beans
- Broth
- Heavy cream
- Shredded Cheese
This is going to be a little experiment, so stay tuned on Thursday to see how it turns out

Pad Thai Casserole click here for the recipe from PaleOMG
Saturday:
Paleo Chicken with bacon
- 4 ounces of bacon (chopped)
- 1 leek (chopped)
- 1 red bell pepper (chopped)
- Chicken thighs (diced)
- 1/2 Cup White wine
- 1 (14 ounce can) full fat coconut milk
- 1 Tablespoon arrowroot powder (dissolved in 1/4 c coconut milk)
- Spices- sea salt, oregano & Trader Joe’s 21 Salute seasoning
Cook bacon and then set aside in a bowl
Using the bacon grease- add leeks then bell pepper, bacon and chicken. Cook 5 minutes
Add white wine and cook until wine is reduced by 3/4 cup
Add arrowroot mixture and cook until thickened
Season with sea salt, oregano & Trader Joe’s 21 seasoning salute
