It’s back to school season! Whether you have kids in elementary school or college, it means a shift in everyone’s schedules. An increase in activities, means it’s time to make things simple. By planning out our meals for the week, it takes stress away. This week we have some simple dinners to make with ground beef. We recently stocked up on ground beef at a local farm, so we are ready to go!!
Simple Dinners to Make with Ground Beef:
Monday:
There is something about pasta that is so comforting- it’s like getting a big hug from your mom.
Spaghetti
- 1 lb of hamburger
- 2 cloves of garlic, diced
- 1 jar of spaghetti sauce
- oregano, parsley, garlic
- Noodles or Spaghetti squash
- Parmesan Cheese
- Mozzarella Cheese
- Prepare Noodles per package or
****If you are going to us Spaghetti squash, here is an easy way to cook Spaghetti squash
Easiest way to prepare Spaghetti Squash

- Wash your squash
- Pierce it several times with a knife
- Put it in the crockpot with 1 cup of water or broth
- Cook on low for 4-6 hours
- Remove from the crockpot- it will be hot so BE CAREFUL!!
- Cut it in half and shred the noodles
2. Cook meat in skillet with diced garlic
3. Add spaghetti sauce
4. Combine the noodles and sauce- add cheese
5. Enjoy!
Tuesday:
We could actually eat tacos every day. What’s not to love??? Making them in the Instant Pot makes it even better, because it’s pretty hands off. You just let your Instant Pot do it’s thing!
Instant Pot Tacos
- Put about 1 cup of water to the bottom of your Instant Pot
- Add ground beef and diced garlic
- Sprinkle the taco seasoning over the meat (I like to use my homemade recipe)
- Using the manual option on high on your Instant Pot cook for 20 minutes (make sure that the dial is turned to sealed) Make sure the Instant Pot is not under a cabinet and has plenty of space to release the pressure at the end
- Once the time is up turn the dial to release the pressure and let the steam finish releasing
- Then take off the lid and change it to saute, make sure the beef is cooked through and let it thicken (about 5-6 minutes)
- Once it’s all ready serve with tortillas, rice or on salad
- Top with tomatoes, cheese avocado, and sour cream!

There is something cooking on the grill that just feels like summer.
Grilled Hamburgers with roasted broccoli and baked beans
If you want an easy side dish, try this roasted broccoli! It’s super easy and delicious…
- Broccoli (you can use fresh or frozen)
- Olive Oil
- Salt and Pepper
Preheat your oven to 425 degrees
Put broccoli on a cookie sheet (I usually line the baking sheet with foil first for easy clean up)
Drizzle with olive oil, sprinkle with salt and pepper
Cook for 10-15 minutes- checking on it after 10 minutes. You want it to be crispy!

Sundays = casseroles, it’s my new trend! Want to try it with me? Casseroles really feel like love in a pan. They also heat up well and make really good leftovers and lunches. So win-win-win (anyone watch The Office).
