Make My Menu Monday- see how I meal plan every week!

Meal planning is something I really enjoy! There is something about having order in my life that brings calm and peace to my life. Having meals planned for the week not only helps my household eat healthy and yummy meals, it also saves time, money and frustration. It’s also a great way to make sure that I have lunches for the week as well. So all around it’s a win-win. 

Monday:

Chicken Tacos

Tuesday:

Chicken and Rice Casserole

Wednesday:

Meatloaf

  • 1# ground beef
  • 1# sausage
  • 1 small yellow onion
  • 2-3 cloves garlic, minced
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp pepper
  • bacon
  1. Place all ingredients except for the bacon in a large bowl
  2. Mix well ( I just get in there using my hands to mix)
  3. Put the meat mixture into a loaf pan
  4. Lay bacon across both ways with bacon and tuck it in
  5. Bake at 350 degrees for 1 hour and 15 minutes (until completely done and there is no pink in the center)
To reuse this meal:
  • reheat as is
  • crumble up a piece and put it over rice (for a rice bowl)
  • have a Meatloaf sandwich
  • cook up some diced sweet potatoes and crumble it in all together!

Tacos

I usually turn my tacos into a taco bowl with cauliflower rice. Most grocery stores now have cauliflower rice in the freezer section. It’s awesome and super handy. 

Add some tortilla chips for some extra crunch!

These are my favorite guilt free tortilla chips!!

Saturday:

Chili (This is another recipe that I made ahead of time)

  • 2 lbs hamburger
  • chili powder, garlic powder, cumin paprika, salt and pepper
  • 1 can kidney beans
  • 1 can black beans
  • 1 can diced tomatoes
  • Cook hamburger until done
  1. Add all ingredients to a crockpot
  2. Cook on low 8 hours, let cool
  3. Put into freezer bags (if making ahead of time)

 

For this meal, we can just put the chili in the crockpot on low in the morning and it will be all ready to go by dinner!

Sunday:

Taco Salads

Use the left over taco meat & add to shredded lettuce (prepared at the beginning of the week) & any other toppings that you like!

For mine it’s~

  • Tomatoes
  • Avocado
  • Cucumber
  • Cheese
  • Ranch dressing
  • Tortilla chips crumbled up
